Hello
Can I use PHP Grid Control and stored procedure in mysql to view/edit/delete data? Or can PHP Grid Control only work directly with tables?

Hello,
SPs are supported using custom events.
You can inject your custom PHP level code to write your own on_update, on_insert and on_delete events.
These events can override base implementation or work as a filter that will call your code before table DML operations.
If you are using licensed version, you can check demos/editing/custom-events.php
